Tola Njiro Nero d`Avola 2016

Background

The Tola family have produced wine on their estate in Sicily for Three generations.

Vineyard 

The estate's vineyards lie between Bosco Falconera and Giambosano, in turn between Palermo and Trapani where the vineyards feel the warm Scirrocco winds and the light breezes coming off the sea. Vines average 25 years old, yield 2kg of grapes per vine, are espallier trained and guyot pruned.

Winemaking

Modern production with stainless steel rotary presses, picking at night to ensure coolness of grapes arriving at the winery and then followed by six months aging in French oak barriques where harder malic acids covert into softer lactic acids

Food match

Slow cooked red meat dishes with tomatoes, hard herbs and garlic, aged hard cheeses, cold meats.
