Philippe's vineyards lie in the La Roche part of the Pouilly Fuisse Appellation in Southern Burgundy, the most exclusive Appellation in The Maconnaise and the home of the Chardonnay grape. These vineyards have great exposure and produce ripe fruit with melon and peach notes but held together with an excellent mineral core which prevents the wine becoming overly rich. More acidity than most New World Chardonnays, less soft fruit, more driven edge.
Hand-harvested, a small proportion is aged in oak barriques (traditionally Burgundy barrels) and blended back into the main cepage, or blend. This gives a hint of toasted, vanillin character under the mineral fruit. making good Chardonnay is all about this balance between ripe fruit, mineral character and judicious oak ageing.
