Ripe, berryish Cabernet fruit with blackcurrant notes underpinned with more robust cracked pepper and spice notes from the Shiraz, in turn finishing with a sense of terra rossa (roasted earth) flavour, a very typical South African character.
The two parcels of fruit are vinified separately to keep their individual character - the Paardeberg Mountain fruit is more delicate with quite some finesse while the Paarl Valley fruit is more rounded and hearty. The two are then blended together to produce the desired style - combining the two characters to great effect. All fermentation and blending takes place in stainless steel, preserving the juicy character of the wine. The fermenting must is plunged to extract colour and the wine is macerated on the skins for 6 weeks, extracting more colour and flavour definition.
Easy enough to drink on its own, but great with grilled pork and lamb and a great match for a Sunday roast.
